Sweet potatoes roasted with veggie rub
A moreish starter to your barbecue dinner.
Ingredients
- 4 sweet potatoes, medium thick slices or medium dice (1cm thick)
- 1 C ‘Rub with Love’ Veggie Rub
- 1 tbsp kosher salt
- 1 tbsp canola or rice oil
Method
Step 1.
Preheat oven to 220°C.
Step 2.
Toss potatoes in oil to coat evenly.
Step 3.
Coat potatoes with veggie rub and salt. Toss to coat evenly.
Step 4.
Spread potatoes evenly on a parchment paper-lined sheet pan.
Step 5.
Roast until potatoes start to brown slightly and become tender.
Step 6.
Serve and enjoy!
*If you do not prefer the taste or feel of whole spices, feel free to grind the Veggie Rub in a spice grinder or blender until you reach your desired consistency.
