Cedar-planked salmon burgers

  • 1 Wildwood Grilling cedar plank
  • 500g fresh salmon
  • 2 tsp mayonnaise
  • 1 tsp Dijon mustard
  • ½ cup panko breadcrumbs
  • ¼ cup chopped chives
  • Salt & pepper
  • Capers


Step 1.
Soak grilling plank in water for a least one hour, making sure it’s completely submerged.

Step 2.
Preheat barbecue to 180ºC.

Step 3.
Dice salmon and in a bowl, gently combine with mayonnaise, mustard, panko, chives, salt and pepper.

Step 4.
Form into four patties and place on the plank. Put the plank on the preheated barbecue and close the lid. After 8–10 minutes the salmon patties will be firm to the touch, remove from the heat.

Step 5.
Load the burger buns with salmon burgers and your favourite toppings and serve hot.
